Hand harvested, part whole bunch semi carbonic ally macerated on skins for 5 days before pressing, part aged in old Oak barrels and part aged in a stainless steel tank for 7 months before bottling. No yeast inoculation or additives apart from a small amount of SO2. Lightly filtered. You can pair it with escargot, stew, hot smoked salmon filets, braised and roasted meat dishes, Moroccan lamb, grilled vegetables, Thai curry, samosas, fried dough, pizza, fresh fruit, Gruyere cheese and many other dishes.
